Courgettes!

Green Dumpling soup


For the courgette soup:

  • 1 courgette 
  • 1 onion
  • 1 cup of White cabbage
  • 1 potato 
  • 2 turnips
  • 3 sticks of celery
  • 1 cup of Peas
  • Stock
  • Dill
  • Parsley
  • Water
  • Pepper and salt
  • Oat milk

Fry the onions till golden. Add the cabbage and courgette and fry for an extra minute. Then add the boiling water, stock and remaining ingredients. Cook until the potatoes are soft. Blend with a hand blender. 


For the dumplings/ knaidlach

  • 1 cup for matzo meal (medium grain)
  • 1 egg replacer
  • 1 cup of boiling water
  • 1 tsp salt
  • 2 tbsp sunflower oil
  • sprinkling of pepper

Mix together, then leave in the fridge for 1 hour. Form into just larger than golf balls and drop into boiling water. Leave cooking on the hob for 20mins.
