The food cycle

Pickling and fermenting is one of the key parts of the food growing cycle. Thanks to supermarkets providing everything we want 365 days a year we have forgotten that food is connected to seasons, but for most of human history, if we wanted to eat in the lean months of winter then we better have pickled in the summer months when food grows abundantly. Creating local and secure food systems, we believe, means everyone should have access and time to grow their own food but also that people should know what to do with it once it is grown.
